Delicious Pinto Beans without the Fat that you get in Southern-Style (but it's still good!)
You will need the following:
A pound of dried pinto beans
An entire head of garlic chopped into little pieces
A large onion cut into bite-sized pieces
Eight cups of water
First, sort through the beans as you add them to a bowl of water for cleaning. Pick out anything that looks like little pieces of dirt (it is!). Swish the beans around to clean them then drain the beans.
Now, add all of the above ingredients into a big pot and simmer for at least three hours. Then, add hefty pinches of salt and pepper. Simmer for at least one more hour.
You want your beans to be tender.
Cooking your own beans is so much cheaper than prepared beans, and pinto beans go with so many main courses: pork roast, fried or baked chicken, beef ribs. The list is endless.
