Easy, Peasy Queso Dip with Mexican Sausage

You will need the following ingredients to make this delicious cheese dip:

One pound of chorizo sausage cut and fried in little pieces
Half a pound of grated Monterey cheese

First, fry the chorizo until it is done and broken into little pieces.
Then, add the grated Monterey cheese.
Put the two ingredients into an oven-proof baking dish and bake at 350 degrees until the cheese is melted and bubbly.

What is Monterey Jack cheese?

Monterey Jack cheese is an American semi-hard cheese that is customarily white, made using cow's milk. It is commonly sold by itself or mixed with Colby to make a marbled cheese known as Colby-Jack cheese.

In its earliest form, Monterey Jack was made by the Mexican Franciscan friars of Monterey, California, during the 18th century. Californian businessman David Jack sold the cheese commercially. He produced a mild, which cheese, which came to be known as "Jack's Cheese," and eventually "Monterey Jack."

Aguifreda Bay

At the bottom of the cliff they pile up -
solid and lumpen,
the rocks that have been falling,
slipping down without reaching the sea,
the sea that bellows and smokes, breaking below.
In thousands of years,
you tell me from our vantage point above,
all this will be sand.
As we looked at the inlet
suddenly our perspective widened
and everything reversed -
we became infinitely tiny,
as though we were dwelling inside those gigantic boulders.
At the foot of the cliff we considered
the granular movements of sand,
the flotsam and jetsam,
and we took shelter in any one of those pebbles.
Shrinking, we felt the rough grain of the rocks,
a wall from which the sandstone is loosened,
the outline of ourselves.
Fractures and faultlines of the accretions of minerals -
this is what we are.
The detritus of shadows, the seams of gray,
begin to glimpse themselves in the sky.
Drawing breath once more brought back the pines,
the coastline, a path.
